“Onion You Didn’t!”

I HAD HELD ONTO THIS burger idea for so long, that I actually reappropriated it as one of our now-popular signature pizzas at Dorrian’s Red Hand, where I have more than a few fingers in creating the menu.

The idea was simple; since I love the (literal and figurative) sweet combination of beef and onions, the notion of not only putting dried onion soup mix into some ground beef—which is done by loads of people all the time—needed to be gregariously made over-the-top with fresh-cracked pepper and some added allium-escence, such as onion soup broth for greater moisture and richness, onion soup dip for its creaminess, raw green onions for its bright piquancy and color, and fried onions for a textured crunch.

Once rounded out with some melted aromatic Gruyere cheese, and you’ve got a juicy, flavorful, heady, and satisfying burger that hits on all cylinders. I felt a side of Britain’s popular Walkers Cheese & Onion Potato Chips were the “proper” compliment to the burger and a great reward for finally getting this dish out of my head and onto a plate!
